The Matfer Bourgeat Stainless Steel Giant Reduction Spatula w/ Exoglass® Handle is a 47 1/4″ professional tool designed for mixing, scraping, and reducing large batches in commercial stockpots, tilting kettles, and large rondeau pans. The perforated stainless steel paddle eases the mixing of preparations, reductions, stews, and braised items without splashing, while the extended length keeps hands safely away from heat.

The Exoglass® paddle handle is fitted with a stop to maximize the return on effort, a reinforced attachment to prevent breakage, and is heat resistant up to 428 degrees F. An oblong stainless steel tube handle prevents rolling along bowl rims, and an intermediate handle prevents contact with heat or cold during use. Easy to clean and built for the rigors of institutional batch cooking.
