EC professional cutters are made entirely of AISI 304 s/steel. This material is suitable for food (hygiene) and is perfectly resistant to acids and salts. Has high resistance against oxidation. Blades are rectified/tempered made with cutlery steel (ASI 420) designed to cut, mince, whisk and mix without ever having to change utensils.
