The Alto-Shaam 20-20GCLASSIC full-size combi oven is designed for high-capacity cooking and features a roll-in design to streamline kitchen operations. It accommodates 20 full-size sheet pans (not included) or a maximum capacity of 480 pounds. This versatile unit supports three cooking modes: boilerless steam, convection, and combination, offering flexibility for diverse recipes. Its 7-inch programmable touchscreen control pad includes Absolute Humidity Control™ for precise adjustments, while its temperature range of 85 to 550 degrees Fahrenheit meets various cooking requirements. Maintenance is simplified with a front-accessible retractable rinse hose and five fully automated cleaning cycles.

The Alto-Shaam 20-20GCLASSIC combi oven is built with stainless steel for durability and features high-efficiency LED interior lighting for visibility during operation. It includes one roll-in cart with 20 non-tilt support rails and 10 wire shelves to improve organization and workflow. The right-hinged door and SafeVent™ steam venting system enhance safety, while seismic legs provide additional stability in commercial environments. The unit also includes a USB access port for operational convenience.
