This unit accommodates (20) 18-inch x 13-inch half-size sheet pans or (20) 12-inch x 20-inch full-size hotel pans, supported by 19 non-tilt support rails on a roll-in cart. It features three versatile cooking modes—Boilerless steam, convection, and combination—controlled through a 10-inch programmable touchscreen with Absolute Humidity Control™ for precision and consistency.

The Alto-Shaam 20-10GPRO roll-in gas combi oven includes five fully automated cleaning cycles, a front-accessible retractable rinse hose, and SafeVent™ automatic steam venting for operator convenience. The ChefLinc™ remote oven management system, Wi-Fi capable, enables remote monitoring and control, while a programmable cool-down mode ensures safe operation. Constructed with durable stainless steel, this oven includes seismic legs for stability in busy kitchens and a removable “T”-style temperature probe for accurate internal measurements.
